I used leftover dipping chocolate from the Kulfi (saffron-cardamom) Creams to make a darker ganache I dubbed C³ (C-cubed): cardamom, cinnamon, and cayenne/capsaicin. This I cut into literal cubes (first researching technique online; a hot blade frequently dipped in hot water is necessary) and coated in milk and white chocolate. They are remarkably tasty, if not beautiful.

Now I understand why chocolate making becomes a hobby. You keep ending up with leftover chocolate you need to make into something else.

USAID: what is the deal? Mainstream news implies the agency is targeted only because it’s expensive, while right wing tweets suggest it’s totally corrupt and getting long overdue just desserts. What are the criticisms of USAID, beyond cost (I assume there are legit benefits to its costs)?

The thing about Trump’s tariffs is much of his own base opposes them. It’s a good sign that republicans are not a monolith on this, many are vocally dissenting. Tariffs are a bad idea in my opinion, and I am hopeful that republicans might correct them while democrats are busy being insane for other reasons.

VICTORY.

I read up on tempering/dipping and made another batch of saffron-cardamom truffles and this time they all got properly coated with very little “distempering” of the chocolate even at the end.

I have been making delicious saffron-cardamom truffles, but this was my most catastrophic coating episode yet. At least some of them look okay. Even the ugliest will still be tasty.

I sure eat a lot of from-scratch homemade food. For breakfast today I had a glass of apple-ginger-lemon juice I juiced from scratch, followed by a green salad with homemade lemon/olive oil dressing, fresh just-baked homemade bread, and homemade saffron-cardamom creme Anglaise.

I'm sure I get plenty of agricultural toxins anyway since I buy whatever produce and ingredients are cheapest at the mainstream grocery store.
