I used leftover dipping chocolate from the Kulfi (saffron-cardamom) Creams to make a darker ganache I dubbed C³ (C-cubed): cardamom, cinnamon, and cayenne/capsaicin. This I cut into literal cubes (first researching technique online; a hot blade frequently dipped in hot water is necessary) and coated in milk and white chocolate. They are remarkably tasty, if not beautiful.
Now I understand why chocolate making becomes a hobby. You keep ending up with leftover chocolate you need to make into something else.

@ninapaley If you want to make bonbons instead of truffles, you can get silicone molds (make sure they are very pliable), coat with chocolate, set in freezer until hard, fill almost to top, set the filling, then cap with more chocolate. Yes, more steps, but fancy shapes.

@Fullycaffeinated Yeah I've been watching videos about molded chocolates. That's how I know it's a hobby: more and more equipment to buy. I've already bought special dipping tools, and little paper glassine cups, and little boxes (arriving today) to put them in to give away. Whereas the chocolate itself is strictly Aldi, because I'm trying to keep it cheap. If I bought molds they'd be polycarbonate, and with that investment I wouldn't be able to stop, next thing you know I'd be buying expensive coating chocolate and edible metallic dusts and food colorings to decorate the molds...Just say no.

@ninapaley Honestly, many of my molds came from the dollar store. They call them ice cube trays, but what do they know. Just watch out for the really stiff ones, they're a bitch to pop out.

@ninapaley @Fullycaffeinated I've scored molds at yard sales and thrift stores. And because there's a Michael's craft store in the same shopping center as the grocery store I do weekly shop at I run in there occasionally and have scored clearance deals (like $1) on edible dusts and fancy shaped sprinkles, they keep in a bag in the freezer just fine.
I can think of much, much worse hobbies to invest a bit in than making chocolates :)
