Emeilia Perez is a terrible movie.

I used leftover dipping chocolate from the Kulfi (saffron-cardamom) Creams to make a darker ganache I dubbed C³ (C-cubed): cardamom, cinnamon, and cayenne/capsaicin. This I cut into literal cubes (first researching technique online; a hot blade frequently dipped in hot water is necessary) and coated in milk and white chocolate. They are remarkably tasty, if not beautiful.
Now I understand why chocolate making becomes a hobby. You keep ending up with leftover chocolate you need to make into something else.

USAID: what is the deal? Mainstream news implies the agency is targeted only because it’s expensive, while right wing tweets suggest it’s totally corrupt and getting long overdue just desserts. What are the criticisms of USAID, beyond cost (I assume there are legit benefits to its costs)?

The thing about Trump’s tariffs is much of his own base opposes them. It’s a good sign that republicans are not a monolith on this, many are vocally dissenting. Tariffs are a bad idea in my opinion, and I am hopeful that republicans might correct them while democrats are busy being insane for other reasons.

VICTORY.
I read up on tempering/dipping and made another batch of saffron-cardamom truffles and this time they all got properly coated with very little “distempering” of the chocolate even at the end.
NEVER GIVE UP, NEVER SURRENDER!

These photos tell the sad story of the seized dipping chocolate.
I have been making delicious saffron-cardamom truffles, but this was my most catastrophic coating episode yet. At least some of them look okay. Even the ugliest will still be tasty.

New Heterodorx podcast! Episode 159: The Ideological Capture of Tech with Bryan Lunduke https://heterodorx.substack.com/p/the-ideological-capture-of-tech-with
Remember the Free and Open Internet? Tech journalist Bryan Lunduke does, and isn’t afraid to write about its demise one institutional capture at a time. We discuss having our hearts broken by our beloved Internet Archive; the Wikipedia Foundation’s shady dealings; the Electronic Frontier Foundation’s championing “the right for little children to look at porn on the internet”; and Mozilla’s “Feminist decolonial lgbtqia+ climate justice using AI event in Zambia.” Like any good journalists, we ask the tough questions: How do you get your name forbidden by ChatGPT? Who is more banned from conferences, Lunduke or Paley? Are we gonna have a free and open internet, or not? (Answer: not.) Whether you love nerds or merely are one, this entertaining episode will have you wanting to get offline more than ever.

"We should not discriminate against trans-identified individuals in matters of housing, education, employment, etc. An employee who is a good employee and deserves a promotion should not be denied that promotion because he believes he is a woman any more than an employee who is Catholic should be denied the promotion because he believes priests engage in transubstantiation and turn bread and wine into the body and blood of Jesus.
Both the Catholic and the trans-identified person can choose to believe as they wish. Both can present themselves in a way that reflects their beliefs. But neither can compel us to accept their metaphysical beliefs."
