@stephagain @FeartnTired Celery root works too. When I lived in Veyrier (on the French border just outside of Geneva Switzerland) the markets only had celery root, not "celery branch," and while different it still added the appropriate savory vegetal flavor to soups. I would use celery root more but here in the US it's an oddity, just as the stalks are an oddity in France. Cultural differences.
