January 19, 2024. The garlic ferment is on day four. The heady scent of fermentation that echoes roasting garlic is just starting. The last of the 2024 crop is all in the fermentation vessel. This is an annual gardening milestone! January 6, 2025. Fermented hot sauces are still important. This is Sosu from the Kirsten Shockey book. The paste is the balance of our 2024 hot peppers, fermented 2023 garlic paste, palm sugar, and fish sauce. The fermentation started October 24th and ended today. Some of the hot peppers were sun dried so the flavor is wonderful and complicated. December 29, 2024, there is no frost in the ground, there should be a layer of frost. However, eating the tasty vegetables is still important. December 1, 2024. We are processing raw chickpea hummus to enjoy later. The green chickpeas have been sprouted. The hummus will ferment on the counter to blend the flavors. November 25, 2024. The fermented leek paste is lovely and bitter today. It will ferment on the countertop until it tastes right. We enjoyed leeks for paste, sauerkraut, and roasting over the last week. We will be smart in 2025. The leek harvest will be spread out over September, October, and November. The first time for us leeks are still green and robust. We have a dozen. They are still growing bigger to my eyes. How much freezing does it take to damage the crop? The 2024 Rempah fermentation has been jarred. Two of the seven pints are pictured. It is a spicy Indonesian sauce we started on October 16th. At least we have good sauces for the dark times. November 7, 2024 PM. Garlic planting about half done. Soil temperature is 60 F, 15 C. Soil moisture is passable. Using a bulb planting tool to make the individual holes. Placing each clove with love. November 3, 2024. Aronia berries wish to be preserved as jam. So do the raspberries. This batch is 1,600 grams, 2/3rds aronias. There will be some dried ginger because it makes a tasty mixed fruit jam. This is the first jam making of fall 2024. These ripe vegetables aspire to be Kasundi. The preservation through Kasundi idea is from southern Australia. The recipe is from The Spice Works. Brave as we are, we added Kashmiri chili powder per the recipe.
