The 2024 Rempah fermentation has been jarred. Two of the seven pints are pictured. It is a spicy Indonesian sauce we started on October 16th. At least we have good sauces for the dark times. Thanks for the reminder @Pollinators Since we'll get hard frost next week, I need to harvest quite a lot the coming days. Amongst it are carrots, which I'd like to turn into a carrot achar (from the Shockey book you recommended).

Dark days (literally and figuratively) are more bearable with good food.

@feinschmeckergarten. I support the carrot anchar. There will be more carrots in the garden next season, long rows with sunshine. I will thin them. They will grow deep orange roots. #nodig, #minnesota, #Zone4b.

@Pollinators Usually I don't thin my carrots. I mix the seeds with fine sand and broadcast them on the prepared bed. After lightly raking them in, I cover the bed with fleece to keep the soil moist until they germinate. Maybe the yield is higher in rows (?), but I'm happy with what I get and it's little work.

@feinschmeckergarten. Rows are not mandatory. We can plant in other shapes. Sand and fleece you say. We have burlap to take the place of fleece and Minnesota sand to replicate the German sand.

@Pollinators Hessian is a good alternative. I'm just not sure if it lets enough light through for germination. Tell me when you know.

@feinschmeckergarten. We have lightweight hessian material. We have used it for moisture retention and bird protection for native seed plantings.
