Last Thursday's episode of the Osterholm Update has an extensive segment on H5N1 (bird flu). He thinks the pandemic in cattle is starting to fizzle out, but that in poultry, it's still going full tilt. He says the reservoir in nature is migratory waterfowl. He think their feces dry on the ground and are picked up as dust in the wind.
