Sautee diced onions in olive oil (sorry I don't measure or weigh. A few medium onions I guess) and some garlic (about 1 tsp jarred minced garlic, or a couple fresh cloves) until tender/soft. Add diced celery (about the same volume as the onions, 3 large stalks or 5 medium), a large diced carrot (optional) and a medium diced potato. Add about 1 pound dried lentils (4 cups?) and enough water, bring to boil. Add a few tablespoons of homemade veggie bouillon mix (equal parts nutritional yeast flakes, table salt, and Trader Joes 21 Seasonings Salute or similar herb/seasoning mix like Mrs Dash), a few bay leaves, and 2-4 pucks turmeric juice (I juice my own and freeze in little pucks, each about the size of an ice cube, great for cooking!). Simmer everything until lentils are fully cooked and desired soup-like consistency is achieved. Add water if needed. Season to taste; might need more bouillon mix or just salt. Can also add soy sauce/tamari to season. Finally, add 1 bunch fresh parsley and 1 bunch fresh dill, washed and chopped. Stir fully and remove from heat.
