Creamy mushroom spinach pasta (again).
I made this earlier in the week with chicken, but Ms. FoC was unhappy about all the cheese, cream and butter.
So, today I made a vegan version with mushroom, garlic, spinach, and eggplant instead of chicken. Also soy milk instead of cream and coconut oil instead butter.
I cooked it all in one pot so starch from the pasta would thicken the sauce more. It had a similar vibe. I would’ve liked a little parm, but it was good!
