Creamy mushroom spinach pasta (again).

I made this earlier in the week with chicken, but Ms. FoC was unhappy about all the cheese, cream and butter.

So, today I made a vegan version with mushroom, garlic, spinach, and eggplant instead of chicken. Also soy milk instead of cream and coconut oil instead butter.

I cooked it all in one pot so starch from the pasta would thicken the sauce more. It had a similar vibe. I would’ve liked a little parm, but it was good!

Does any one have a good recommendation for a 27-in monitor that can be easily acquired in Japan?

I will use it for mostly office stuff and very light games, movies, etc.

Preferably cheap, but not the cheapest. Good cost performance preferred.

Uh oh.

A weird white rectangle has appeared in the top corner of my monitor. It does this for different connections to my windows and Mac machines and when showing just the menu, so I think it is obviously an issue with the monitor itself.

I turned it off in the hope that it just needs a break 🤷‍♀️
