@keenan I have a similar process. Although I do have a Chemex, I don't use it often because of the time required. But I do use fresh beans (we have a Trade Coffee subscription), good water, a conical burr grinder, and I premoisten the filter. I can't remember why that's part of the Chemex ritual but it is, and I incorporate it into my drip coffee process. I have a great drip coffee maker that does the prepour bloom before finishing the brew. So now my wife won't drink coffee from anywhere else.
