@bennomatic mmmm - so is that a radiant electric or induction stove top? How fast does it heat up/cool down?

@dxzdb Radiant. Heats up quick, but stays hot for quite a bit. I like the idea of induction, but the requirement for a new appliance AND all new pots and pans is quite a hump to get over.

I've been making coffee with the same kettle for 20+ years. I'm amenable to change, but I'd feel sad throwing t hat thing away.

And re the broccoli, I find that I can get to 1-1.5 inches from where the farmer cuts it without getting too fibrous. YMMV, but more broc is good broc!!

@bennomatic Good to know! Yeah we’ve got a gas stove that heats up and cools down like instantly so that will be hard to leave. We may just keep using it for another decade (we have a great vent hood) The pot thing haunts us too + repair costs of induction can be like near the cost of another lesser stove.

I'm still trying to wrap my head around copper clad steel pots that no longer stay magnetic when used on a gas stove. Apparently the heat demagnetizes them? My magnet test validated it 😲

@bennomatic Oh - I did read that induction stoves can REALLY boil stuff quickly. Apparently they are very popular in Europe and with professional chefs. I guess the size of the burners matters. Maybe someday we could go through a pot-otomy. 🤣

@dxzdb yeah, I don’t know too much about how the induction stuff works, but the radiant electric is like the worst of all worlds. It’s either on or off, so if you turn it down, it basically pulses, turning on until it hits an upper threshold and then turning off until it hits a lower threshold, and I can’t imagine that’s great for the process.

I assume that with induction, just like with gas, you can really control the temp. Maybe even more evenly.

@dxzdb But while gas has downsides, the most common issue is the byproduct, so if you’ve got a good hood, then I say by all means keep it. I wish we had gas, but we are like 15 miles by road from the nearest town. Closer as the bird flies (like 5 mi; the route to town is like a question mark), but the shortest path is not how the pipe would be laid if the local gas company were to plumb all the way out here.

@bennomatic I watched a ton of YT videos from this lady: https://www.youtube.com/@helenrennie In addition to some extensive stove cooking comparisons - she talked about she ended up with a Wolf brand (EXPENSIVE) specifically because she wanted to use it on propane. But yeah switching is not easy.

@dxzdb I mean, money can't buy happiness, but with enough money, a lot of things are certainly less of a stress, and contribute less to unhappiness.

Of course, I guess then there's the creeping irony of unhappiness: “I just spent $10k switching over to induction cookware, and everyone still thinks I'm an asshole. Guess I need to spend $20k on something else!”
