So I got the reply to my GSPR questions from a lawyer. Of course he didn't tell me specifically what I should do from my product, but he linked me to a few Czech laws that already apply for product safety, and linked me also to our Trade Inspection authority, which was quite helpful.

• I will put contact information on the packaging (stickers are too small and I don't want to put it in notebooks)
• Product names or SKU need to be unique, so I'll put that with the info as well.
• I'll put usage instructions as well, I already do this at my shop (don't put stickers on surfaces that get wet)
• I don't need to warn about papercuts since notebooks and stickers assumes common usage.
• To be safe, I will put disclaimer about small parts with my sticker packaging.

This should be enough to comply with GSPR for my products and my small business.
I encourage you to see if you have any product safety laws locally, or any Trade Inspection authority.

@dana_cz When you say you'll put contact information on the packaging, whose contact info is that? Yours, your manufacturer's, someone else's?
Also, my understanding was that for online sales, the contact information should also be listed in the shop page, where the customer can see it before purchase.
A big problem with this requirement for many people has been that they apparently have to dox themselves to every visitor of their online shop.

@eishiya I'm the manufacturer, so my information (name, email, address). I'm looking to get a PO Box or a correspondece address.
It's required for e-stores to have contact information here, which I do (except physical address, atm), and I'm required to list my registered business ID on the site. Every country is different, though.
If you don't sell a physical product, I imagine email address is fine.
