@freyja_wildes another one, which I initially did with cheap mushrooms:
Put on pasta
Fry mushrooms in some oil with (green) chili and maybe garlic. Add some stock powder/cube when liquid from mushrooms come out, add leafy spinach. Simmer until spinach shrinks, add soy cream, add a little pasta water. Simmer and pasta sauce is done.
