First of all, good for you! Nextcloud is an amazing collection of tools.
I would say that the best way to self host it, or anything, is the way that you are most comfortable. I run my instance on a FreeBSD server, with the main components isolated in jails. This for instance, allows me to easily upgrade the database service without having to impact the installed packages on the redis server, nor the nextcloud application itself.
I like this level of separation, and employ it in nearly everything I do anymore. If you are familiar with TrueNAS, then that is an excellent place for you to start.
