If you have a pretty good computer (anything capable of gaming) you can download a program called LM Studio.
Then you can run large language models locally. Yes a ton of energy was used to train them but it's sunk cost. So you can run them if you want. And they won't steal your data.
And then you can see that without the careful guard rails that Chatgpt adds on the website, they're pretty dumb. You can learn how to trick them.
