It is dragging humanity away from cannibalism, blood sacrifice, and other unholy acts by offering a symbolic act, similar to how he preached through parables. Instead of telling people plainly not to do something and thus be rejected, he offers them a ritual that they can get behind. Then later he bled on the cross, so that we’d never need bleed for a covenant with God again, for life is God’s gift and blood is the currency of the soul.
