I rediscovered the gradle biome again in nix world.

Some tools use gradle directly and so they dont see the toolchains declared by a nix-built gradle. I want to pick up this PR and get it updated, seeing as I've bookmarked it twice so far https://github.com/NixOS/nixpkgs/pull/207308 already previewed the rebase, it's slightly messy, need to be well rested for that
