The two instances I am on both seem to be struggling with keeping up with posts. I imagine there's a higher than usual bit of traffic going across the fediverse.

As I said, I'll post a recipe for every fedi meta post that I make. Disclaimer: not necessarily one that I've tried, but I'll note when it is.
On a theme of the week: DIY feta

@kc2ihx I'm not sure I want a home feta lab, but I think what I need is a neighbour with a home feta lab! That would be great. Bonus points if they also have a sailboat they need a hand with.

I have vague notions of wanting to turn a spare "kitchenette" in the basement into a room for fermentation-based hobbies, but I already have a lot of hobbies* and not enough time...

As someone who used to / still does, on occasion, make their own kraut, I do gotta say, though, refrigerator-pickled red onions have been a major life-changer. Probably one of the easiest things to do. Refigerator radish ferments too (literally sliced radishes + some salt and in the fridge they go.)

They taste even better when done in tactical ball jars. Since I live in Massachusetts they don't sell tactical red onions (thanks Obama) or tactical Star Anise so I order them from out of state.

I'm so glad the Ball corporation maintains the same branding on their jars as they do on their satellites.
We regularly make fridge-pickled red onions, really whenever we have half of one left without a plan to use it.
I haven't thought about putting star anise in mine though - usually a couple garlic cloves and pepper, with apple cider vinegar.

I was very confused driving by their plant in Boulder when I first moved there. I only knew them as the company that makes home canning supplies until then.

I'm a little surprised you weren't aware of that. But yeah, it seems like something out of a 1950s-era American Manufacturing Conglomerate, or Aperture Science from the game Portal, which I supposed was meant to be a parody of that.
(And that phenomena still very much exists it seems, they're generally more likely to separate branding now)

@Geojoek @ve3qbz @kc2ihx Let's face it, black garlic is the ultimate tacticool garnish. Preferably served in a matte OD green molle mag pouch and eaten with a non-magnetic titanium EDC EOD TLA tactical foon.
