@kc2ihx I'm not sure I want a home feta lab, but I think what I need is a neighbour with a home feta lab! That would be great. Bonus points if they also have a sailboat they need a hand with.

As someone who used to / still does, on occasion, make their own kraut, I do gotta say, though, refrigerator-pickled red onions have been a major life-changer. Probably one of the easiest things to do. Refigerator radish ferments too (literally sliced radishes + some salt and in the fridge they go.)

They taste even better when done in tactical ball jars. Since I live in Massachusetts they don't sell tactical red onions (thanks Obama) or tactical Star Anise so I order them from out of state.

I'm so glad the Ball corporation maintains the same branding on their jars as they do on their satellites.

We regularly make fridge-pickled red onions, really whenever we have half of one left without a plan to use it.

I haven't thought about putting star anise in mine though - usually a couple garlic cloves and pepper, with apple cider vinegar.

I'm a little surprised you weren't aware of that. But yeah, it seems like something out of a 1950s-era American Manufacturing Conglomerate, or Aperture Science from the game Portal, which I supposed was meant to be a parody of that.

(And that phenomena still very much exists it seems, they're generally more likely to separate branding now)
