@jessie assuming you eat cheese or some acceptable melting substitute, this is a very good, unique, easy recipe we've used for years: Sweet Potato Quesadillas. Obviously, being a quesadilla, you can dress it up with anything from jalapeño to crushed pecans to ???? But it's fine as is.

@jessie yes! If you go in on the cayenne you can make it nice and warm, but if you're a salsa maker, this is a great vehicle. We have it both with a regular red salsa and with the mango or pineapple habanero salsa we mostly use for fish tacos

@jessie I do not consider the almond business in this too be any kind of cheese replacement - isn't intended to be, isn't trying to be. It's just called that because people expect cheese in a spinach borek. This recipe is really straightforward and you can do it a bit at a time, without any kind if rush. And, it's lovely.

@jessie My family likes to focus on easy, one-pot recipes since we're frequently busy and tired. While this may be a common type of dish for others, we were never familiar with Goulash and roughly follow this recipe, but add a bag of spinach and sub ground turkey.
