It depends, what are you into?

Really, my suggestion would be less to follow accounts, and instead to start following some hashtags for things you are interested in: this will give you posts by anyone within your visible Network that have the hashtags you are following.

For example, you posted this on #AskFedi, which is why I saw it on my timeline.

If you are on a smaller server that doesn't have that many visible accounts, consider following one of the aggregators, like Newsmast, or some Groups, which work by automatically boosting the accounts that they can see. Quite a few servers use stuff like Newsmast to get a bunch of posts from the wider network.

BUT, be careful not to tag that last batch in any responses, because I don't know what happens if you tag newsmast...

I will say, this is one of the great features of the Fediverse, even if it does make it a little harder to get stuff on your feed. If you just put in a little work, you end up with this highly customizable timeline, where you only see the things you are looking to see on that account, and you can even have multiple accounts across multiple servers for different topics.
