TIL you can use .valueAsNumber on a date input and it will return the milliseconds since epoch.

Seeing as the user can't specify a timezone or a time, how is this value even calculated?

@Olliew the time will be midnight and the timezone will either be UTC or the computer timezone depending on what they decided to spec.
