Does anyone know of a FOSS, non-cloud speech to text note taking application which may help to order thoughts and ideas?
I've never really liked the idea of talking to a machine, but I realise I need something to work through stuff in a more structured manner. So summarising and categorising should be part of the workflow.

A quick search thought me that many existing STT FOSS solutions have moved from local solutions to models that rely on pretrained data.
It concerns me that these solutions are basically turned into a façade which relies on huge, centralised compute.
How is it FOSS it it needs huge capital powered datafarms to train the initial model? Perhaps I'm too purist with my build from source Linux distro and the like, but local architecture is important.
