Shrimp and zuccini tagliatelle
Healthy recipe, no carbs.
Can remove the chili powder if you don't like spicy
Ingredients - serves 2
- 2 zuccini
- 20 raw shrimps
- 125g cherry tomatoes
- 3 cloves garlic
- 4 tbsp olive oil
- 1 lime
- basil leaves
- chili powder, salt and pepper
Instructions
- Remove the shrimp shells
- Mince the garlic
- Press the lime to keep only the juice
- Cut the cherry tomatoes in two
- Wash and peel the zuccinis. Use a peeler to make tagliatelle or spaghetti like shapes
- In a bowl, pour 2 Tbsp olive oil, ⅓ of the garlic, salt, chili powder and half of the lime juice
- Add the shrimps and marinate in the fridge for at least 10 minutes
- In a pan, heat the remaining olive oil and the remaining garlic
- On high heat, stir fry the zuccinis tagliatelle for 2 minutes
- Add salt and pepper to taste and remove from the pan while keeping the fat in the pan. Add oil if required.
- In the same pan, stir fry the shrimps for few minutes and set aside, keeping the oil in.
- In the same pan, stir fry the cherry tomatoes. When cooked, pour the remaining lime juice and add 2 Tbsp water.
- Put the shrimps and zuccini back in the pan with the cherry to warm them back up.
