Ratatouille Nicoise
Traditional french recipe for ratatouile, without oven.
To finish the left overs if any, reheat them in a pan and break eggs into it and cook. Voila !
Ingredients :
- 3 Tomatoes
- 2 Bell Peppers
- 2 Eggplants
- 3 Zucchini
- 3 middle sized onions
- 1 garlic clove
- 1 Bouquet Garni
- Olive oil, salt, pepper
Instructions:
- Peel and remove seeds from tomatoes then dice them
- Peel zuchini and eggplants then slice them
- Remove seeds from bell peppers and slice them
- Peel then mince onions
- In a large frying pan, heat up olive oil then saute the onions until golden.
- Add tomatoes and let them cook together for 3-4 mins, whisking with a wooden spoon. You should obtain some sort of puree.
- Add the garlic and season with salt and pepper.
- Add zuchini, eggplants and bell peppers.
- Add bouquet garni
- Cover the pan with a top and let simmer for 30 mins.
Ready to serve hot or cold !
