Mixed Salad
This salad contains no salad, but it's fresh and fulfilling.
Contains no fat other than the ingredients, so it's good for a long day outside.
Ingredients - serves 4
- 1 cucumber, diced
- 1 can of black beans, rinced
- 125g corn
- 1 red bell pepper (capsicum)
- 200g cherry tomatoes
- 50g fresh coriander, sliced
- 1 green lemon
- 1 avocado, diced
- salt and pepper to taste
Instructions
- Add cucumber, beans, red bell pepper, cherry tomatoes and coriander in a big bowl.
- Press the green lemon juice onto the mix
- Add the diced avocado
- Salt and pepper to taste
