Massaman Curry Paste
This is just the paste ! You can then cook it in coconut oil with seafood, beef or lamb and some potatoes, rice, roti ...
Ingredients - about 1 – 1-1/4 cups of finished curry paste
Herbs
- ⅔ cup shallots, sliced
- ½ cup garlic, sliced
- 1 cup red california chili, soaked, de-seeded and cut into small pieces
- ⅓ cup lemongrass, sliced (If you can use only the purple part, use only ¼ cup)
- 2 Tbsp galangal
- 1½ Tbsp cilantro root
- 1½ Tbsp shrimp paste
- 1 tsp salt
Spices
- 3 Tbsp coriander seeds
- 1½ tsp cumin seeds
- 1 tsp white peppercorn
- 1½ Nutmeg (ground)
- 1½ Mace pieces
- 7 pieces white cardamom (whole)
- 1½ tsp cinnamon (ground) or 1 inch long stick
- 7 pieces clove (whole) 7 pieces
Instructions Method:
- Roast all the spices with medium-low heat until they are fragrant, about 3-5 minutes.
- Put all of the roasted spices and herbs together in a blender and puree them.
