Beethoven symphonies 1-8.
Ideally you should use a historically informed (“period”) performance such as Gardiner’s (which also has a talk on why they didn’t modernise it). Anyone who wants strictly instrumental music may wish to stop with number 8 (or the 3rd movement of number 9), since the 4th movement of number 9 ends with a choral ode whose lyrics might offend some (it’s a modified German poem that blends imagery from Greek and Christian religions and alludes to drunkenness) although it does include some good lines. The Hanover Band boxed set also includes the Missa Solemnis (which you might want to omit if you wish to stay clear of the church tradition of the Mass) and Overtures (which are instrumental but were written for use with stories you may or may not like), but it’s easy to leave these out if you want to hear only symphonies. The Hanover Band recordings happened to be made in churches, but the symphonies are not church music.

The second movement of Concerto No.3 in D (nicknamed the Goldfinch flute concerto) is easily playable if you want to find the score on MuseData (I converted it to Lilypond of course); it sounds better when taken down a semitone to Db so as to be closer to Baroque pitch (and anyway flat-keys on the modern flute tend to sound nicer: Debussy knew what he was doing when he wrote in 5 flats).
