So I was a vegetarian from age 18 to 34. During my first pregnancy I craved cheeseburgers so badly that I went back to eating meat, and I didn’t really try too hard to go back to vegetarian after she was born. A few years later I had my 2nd kid, and a few years after that I was diagnosed with eosinophilic esophagitis. I tried following a restrictive diet to manage it, which entailed excluding soy, so being vegetarian seemed completely impossible. My doctor was like no, you can’t do both.

The new medication I’m on is working brilliantly, including a near perfect result from my recent upper endoscopy, so I’ve been back on the vegetarian wagon for about a month now. And wow is the landscape different than 1995 😂

@tayfonay At my office, a sort of cool, shared, working space mostly for startups where everyone seems to be the same age as my kids - they have different food vans outside every day - all of them vegan. And the food is excellent. Would not have been possible 10 years ago, maybe not 5.
