I'm thinking of setting up a server to host my own emails and also provide a place where I can do rsync backups via ssh.

Can anyone recommend a good cloud service and/or steps for setting up a self-hosted email server with open-source software?

@calbaker@fosstodon.org Docker Mail Server would be a good project to look at. I'm not sure what you mean with "clou[n]d service", as that can mean many things these days.

I'm not sure if you want my help anyway, since you're using the #AskMastodon hashtag, and I'm not on Mastodon. Kinda weird to try to limit your question to only those using a particular software to interact with the Fediverse.

I use Mailcow with Brevo for a relay service as that's still a good idea for bulk hosting businesses, on Contabo, who are German and cheap, but watch what you pay for extras above basic VPS or servers.
