One can go to a big well-connected server like mastodon.social before creating an account, without logging in, and do a search on a hashtag, say, #Crafts or #Writing or #Photography, or whatever. Play around with it! (You didn't know you wanted to check both #FiberArts and #FibreArts, did you?)
Then take a look at the users and toots that pop up, and check out their servers. One doesn't need an account to read policies and check the live local feeds to get the vibe.
Folks look for communities of common interests, but I think the priority ought to be on common values for safety and moderation. Although a fascinating local feed is a plus, you can follow anywhere (more or less). But wanting strong moderation on a server with weak moderation is a recipe for hurt.
