“For those looking to include more #vegetarian or #vegan dishes into their repertoire, soups are a great gateway to a more #plantbased diet,” Micah Siva, #chef and #author of “Nosh: Plant-Forward Recipes Celebrating Modern #Jewish #Cuisine,” told the Journal. “Their versatility, ability to build complex flavors and hands-off technique, make them the perfect introduction to vegetarian dishes.”

@littlemiao Do you have any of the Vegetarian Resource Group's books of Jewish recipes? I'm remembering two, but it's possible that there are more. The one that I've used the most is The Lowfat Jewish Vegetarian Cookbook by Debra Wasserman.

The Vegetarian Resource Group also has some recipes online at https://www.vrg.org/ but I find the physical books easier to work with.
