Wife’s LG Gram laptop appears to be dying after about 5 years of use. She doesn’t need anything fancy. Light, good battery life, and probably enough RAM to run Chrome. Sadly it has to be Windows or this wouldn’t be a question, but what’s a laptop that doesn’t suck these days?

For laptops I pretty much always recommend

But I will admit that they're not cheap.
But considering that she doesn't need a lot of performance, you could try and see if there is a second-hand framework board that you could use instead of a new one. It'll be slower but that won't really matter for her probably.
But because you can actually swap components, you can load it up with the maximum amount of RAM as it's not soldered onto the board
