Can someone that definitely knows the answer explain if #signal protects against traffic analysis? IOW, are the any points at which an observer can tell who I am communicating with and how frequently/size of messages?

@gregdavis if by “communicating” you mean exchanging messages, I’d say def not because your client sends messages through Signal’s servers. If it’s a call, an observer could theoretically notice high traffic between yours and your recipient’s IPs. If this is a concern, there’s a setting on the client to route calls through Signal’s servers as well. This way the observer would just see big chunks bouncing between you and Signal, the same as if you were exchanging big video files.
