XMPP is a protocol, it's implemented by many kinds of software. End-to-end encryption is, as the name suggests, applied at each "end": the app of each user.
This means it's the app, not the protocol, which determines E2EE. Just check whatever app you choose supports it (practically all do).
If you're new to XMPP, I humbly suggest you start with Snikket, which can be self-hosted or there is a hosted option. Snikket apps have E2EE and enable it by default. https://snikket.org/quickstart
