Depressive spell over the last couple days, so I looked for and found some healing in kitchen experimentation.
Romesco is one of the overlooked Italian staples in this country...dirt cheap to make and absolutely packed with flavor and versatility. And stealth veggies for those that don't like them by themselves. Eat it with pasta or use it as a dip. Have a new blender and processor which made making it smooth a breeze.
Took the time to augment the roasted tomatoes and sweet pickled red peppers with a mirepoix, and it added impressive depth of flavor, would 100% do this again. Served it with orzo (which should have been linguini but I wanted orzo) and some blanched kale that I needed to use to provide a counterpoint to the sweet and sour. Very good. Peas just for more protein. ^^;

I use Android. Guaranteed OS updates for a long time is a big plus. Should be fully compatible to AT&T networks.
I fucking hate generative AI. I fucking hate AI chatbots / assistants / integration. The only AI I want is AI that I can 100% turn off and the ubiquitous, occasionally helpful/disable-able glorified Markov chain that is autocorrect and associated tools. I want a phone with a fast processor, healthy chunk of memory, solid security, and a decent camera. A well-rated screen is nice, but most are plenty good enough as far as I’m concerned.
I’m slowly trying to de-Google (it’s so fucking hard and time-consuming), so nothing with required integration. As I eventually want to switch to Signal, it’d be nice for a phone that you can vouch makes its universally-panned UI/UX suck less than average.
Absolutely no Google or Apple-manufactured products. It may be almost impossible to avoid all their services, but using their physical product is a non-starter.
Price isn’t a huge consideration. Staying power and durability are.
That’s the short version. I’m convinced it’s literally impossible to get 100% what I want, but I’ll settle for 90%. From what I have read, OnePlus products are compelling, but I can’t say I’m in love with the idea of using a communications device manufactured by a hostile state.
If you think you can make at least a partial recommendation or change my mind about something (except the Google/Apple product thing), please do. Otherwise, boosts are helpful!

This old tiger once kept up with all the gadgets, but the market was a lot tighter back in his day, and it was way easier to get objective and unbiased information on a web that didn’t suck.

Oh my dog...there's a good, proper tasting, vegan sandwich steak product now. As I used to live on cheesesteaks, and I was once a line cook at a place that made them, I know how to make a great one. The nostalgia is real.
I don't live on the processed stuff, and my current kitchen is too small to make such things in-house, but I just love food, and having truly delicious comfort stand-ins nowadays is just so valuable.
I might take photos when I make a traditional setup with hoagie rolls and "classic" ingredients, but I just had buns and habaneros to use. Speaking of, maybe two was a little much, but I was in the mood for ENDORPHINS tonight, and now my sinuses are squeaky clean. -^^-

...it honestly really wasn't that cold, day was gorgeous for this time of year, I was just playing it up. Then again, we ended up in the much warmer (but not piping hot) pool populated behind us for a half-hour before taking the last photo. ^^;

In a reality where cars are unfortunately the only practical way to manage the majority of responsible lives in this country, I wanted to give a shoutout to muh boy Mike here.
Approaching 8 years old and nothing but routine maintenance averaging a paltry $1k a year, cheap to insure, decent power with solid fuel economy, amazing handling, just reliable as all hell. Makes me want to invest in all the old car replacement work that will inevitably have to be done...especially since he's the last of his kind (last model year Ford made compacts and subcompacts).
I love you even if your transmission is a piece of shit. At very least it has always worked. My old stealth-polluting TDI might have been a little (okay, a lot) more fun to drive, but I'm at the point where I love this guy more than any car I've owned.

Vacation to Oregon in the beginning of November is all booked, including a stay in a historic cabin on a wild meadow. This isn't as weird of a segue into beer as you might think.
Now that summer's over and we're into summer II where I live (high temperatures averaging 32'C this week, ugh), I've decided to let go some of my biases and prejudices and get back to some pale American-style lagers. Honestly glad I have, because the couple I've had have been stellar.
First there's Twisted X's Pitmaster Pilsner, a truly American lager, but everything I could want out of one--noticeable grain on the front, an ultra-fast but palpable zip of hops, and a short finish that leaves you feeling quenched and satisfied.
But the one featured here is craveable. While not stylistically pure "Murican (it's an International Pale, despite the vague packaging), it's the absolute pinnacle of what I want out of a pale lager. Stunningly complex malt for such a low SRM, intriguing new-age hops that are full of character with very low bitterness, highly carbonated, so damn clean. Patagonia getting into food and drink might seem hilarious, but their snacks and collaboration here with Deschutes are freaking delicious. Don't sleep on them!
Have all the motivation I need to finally get that Dubbel I told @brudibrau I was going to make done now when I find time around a work schedule that's about to re-intensify. Will see how long my faulty machines last. ^^;

Ike flashbacks out of this one, despite notable differences. For those too young or not far Southern US enough to feel impacts, the thing inflated very big and round after landfall in Cuba, to the extent that its satellite presence took up nearly the entire Gulf. It literally became too large (at the time) for its winds to recover their former strength, but the area of hurricane force winds rivaled the entire area of Arkansas at US landfall.
Helene is also huge, but won't make a landfall before it strikes the Southeast. It'll also be moving quite a bit faster. Jury is out on how strong Helene will be...we're about to test precisely how the developmental climate for tropical cyclones in the Gulf has changed in the past 16 years. All I'm saying is this thing will penetrate harder than insert lewd analogy here.
Ironically, the place I evacuated from escaped most any damage and probably didn't lose power. I evacuated to a friends' place in Shreveport, and after pounding the TX coast, it looped around and took out power where I was for something like 1.5 weeks with sustained tropical storm force winds that seemed to last forever.
TL;DR: Don't take this one for granted! The bigger they are, the longer they take to fall apart, and more destructive they are away from the center!

Tonight's impromptu dinner bullshit had no business turning out as delicious as it was.
After having a very unhealthy (but very effective at soaking up beer) dinner out last night that was essentially all bread, I decided that bread was out of the question tonight. So I looked to the pantry and eyed the bit of wild rice blend and red lentils I had left. Had originally intended this to be a stew, but as I started preparing, I threw caution to the wind and started putting everything together like I was making a risotto.
The gambit paid off. Working slowly, I was able to score a perfectly al dente bite on both water-hungry components without any boiling, gave it a Cajun spice blend, some Violife vegan cheddar, beer, and some healthy colorful stuff, and two hours later, I had the most ridiculous dinner risotto that was cheesy, garlicky, nutty, savory, with a just right amount of heat.
This shouldn't've worked, but three bowls later, I can safely say that it did. Intuition in the kitchen borne out of experience is a hell of a drug.
