it took me far, far too long to learn that I actually don't like podcasts. What I actually like are audiobooks.

It's been a while since I shared any recipes here so before the holiday schedule takes off I am going to share this one that is very popular, vegan, and gluten-free. If I get any time later today I will try to reply here with some photos.

I usually double this recipe when I make it and if you can get homemade vegetable broth it really shines!

Preheat the pot on low and add the olive oil til it shimmers.

Slice the leeks. If you want a video on how to do this let me know. Then toss them in the pot still on low for a sweat. You don't want to hear any sizzling, just enough heat to push out some water and concentrate the flavor while softening the veggies. Add a couple heavy pinches of salt here and then adjust it up at the very end. Let this go about 10-20 minutes which is usually enough time for me to prep the potato and the ginger.

After 20 minutes crank up the heat and dump in the potato, followed by the broth. Cover and bring to a boil then reduce to simmer. Add the minced ginger, paprika, ground coriander.

Simmer covered for about hour then transfer to a large work bowl and take your stick blender to it. If the potato chunks are soft and cooked then it's ready. For a better texture run the blender on low until you get everything at least once, then go high at the end for the smooth texture. I will usually drizzle in some toasted sesame seed oil here if you are into that but be careful it can take over. Finish by adjusting the salt level up to where you want it.

For service a little black pepper is good but use white if you are going for presentation. Dried parsley or anything green also looks great tossed on the surface and if you really wanna blow them away put a little bit of fresh crab on top.

Also great chilled in the summertime.

Took a lot of tries for this girl to stay still long enough for me to get this shot. I love it when they have all the pollen on them!

Using natural light for macrophotography sometimes means you can only capture the high contrast but in this case I really like how it came out!

learned a lot from the first bag so this one is a big more streamlined. I think I have the basic idea down but still needs some important features like pocket pleats.

last weekend some friends and I did some trail maintenance out at Tahuya. Over about six hours of non-stop work we cleared 3/4 mile of severely overgrown trail. It's tough but rewarding work. If anyone wants to join just say hi!

maybe I should edit my #intro post to say this but I try to keep my compulsive editing to a minimum or else I’ll never get anything done.

Anywho, I creep on all your accounts and if I see someone who may live near me in Seattle, WA I will follow you simply for that reason. If you feel moved by it, say hi and maybe we can hang out.

[#]introduction to skotchygut. My friends call me Joel. I like to cook and share recipes that everyone can enjoy. When the weather attempts to cooperate I do stuff outdoors, usually on things with wheels (motorbikes, pedal bikes, in-line skates). The rest of the time I am hiding indoors and coding on something until I get bored with it. Check my status for my latest projects. I also play music, love creative writing, enjoy attending the ballet, and all the meats of our cultural stew.

I have been obsessed with The Simpsons since the 90s and my sister says my super power is being able to relate any prompt to a Simpsons reference. I will try my best to use this power for good but it's not really under my control.

I am a long-time free and open source advocate and am highly prejudiced against closed systems of all varieties. I came here to demonstrate my commitment against corporate-controlled social media. I run my own pleroma instance because I like to know the gory details on our digital infrastructure.

I am originally from the East coast and my extended family remains there. Now I live in Seattle and I love it here. I am single, never married and no kids but I love my many nieces and nephews of all ages.

If you want to go for a ride or a skate, please feel free to hit me up! Seriously. It's been so tough to meet people since 2020.
